For decades, powerful microphones have now been wired with the voice coil attached to the primary of the microphone's transformer, and maybe not referenced to soil (‘floating'). By and large, dynamic microphones are very quiet units consequently of the mixture of transformer isolation and balanced, suspended sign lines throughout, in addition to protected, humbucking coils.
So why don't you instruments? Instruments are notoriously plagued by noise. Humbucking pickups are just an incomplete (though crucial!) solution.
